How to Make Crispy Chicken in a Slow Cooker

I just love a whole roasted “rotisserie” chicken from a crock pot. But the one complaint I get from folks who try this recipe is from chicken skin lovers… trouble makers 😉

Slow cookers are fantastic for cooking up a flavorful bird. But slow cookers kind of stink at letting moisture out or the pot. We don’t eat the skin, so it has never been an issue for us.

But this time around is for you chicken skin lovers.

I prepared my bird the same way and cooked it like always.

But at the end of the cooking time, I transferred my bird to a broiler safe pan (and kept the cooking juices — that makes killer chicken stock!). And then I popped my bird under my broiler for about 5 minutes.

The result?

Beautifully crisp skin.

And oh-so flavorful!

What You Will Need for Crispy Slow Cooker Chicken

Ingredients Needed

Equipment Needed

  • Kitchen scissors or knife to open the packaging
  • 2 large, sturdy spatulas to help transfer the chicken from slow cooker to broiler safe pan
  • Broiler safe pan
  • 6 quart slow cooker

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 6 to 8 hours on low
  • Broiling Time: 3 to 5 minutes, watching closely to get crispy skin without burning it

I like my chicken very tender but not completely falling apart. If you overcook it, it will completely fall apart . It will still have a great flavor, but it will not be as good as it is cooked just right.

Instructions

  • Spray the chicken lightly with oil.

  • Place the chicken breast side down into the 6-quart slow cooker.

  • Sprinkle liberally with the seasoned salt.

  • Cover and cook on low for 6-8 hours.

  • Carefully remove chicken from pot and place in an broiler safe pan. (I used two large, sturdy spatulas to move my chicken into my broiler safe pan.)

  • Broil on high for 3-5 minutes until skin is nice a crispy. (Watch it VERY closely while it is in the broiler. A recipe can go from perfection to burnt in very little time in a broiler.)
