Hello! I’m Lisa, a vegan artist, photographer, author, Vegan Life Coach Educator, and RYT 200 yoga teacher. I love showing others how simple and delicious a plant-based diet can be. I draw and paint, cook, write, take lots of pics, eat lots of chocolate, and practice gratitude daily.
For us, the basic recipe that works everytime is 4 parts milk (we use almond milk), 1 part heavy cream, half a packet of flavored pudding mix (we use sugar free), and sugar/splenda to taste (we use 1-2 tablespoons). You can get creative from there but that always yields a really good ice cream base.
Plant-based fats are the best way to thicken vegan ice cream. Coconut cream, full-fat coconut milk and coconut oil will give the creamiest and thickest results. Cornstarch and tapioca starch can also be used to thicken but the end result will be a little more icy and a little less creamy.
Commercially-produced vegan ice creams are made from soy, almond, cashew, coconut, or rice milk. These products deliver all of the delicious flavor and creaminess of ice cream without harming a single cow. Most supermarkets carry several varieties. And a good natural foods store will stock numerous brands.
If you are looking to experiment with making ice cream and sorbet with unconventional ingredients (and without having to make a custard base for ice cream), then the Creami might be useful. However, we found most results were crumbly and powdery, hardly like the creamy sorbet and ice cream we expected.
Oat Milk. Oat milk is perhaps the creamiest of all the plant milks. Its thick creamy texture means it's one of the closest plant-based milks to resemble dairy milk. Oat milk is quickly becoming a favorite non-dairy alternative to milk with popular brands like Oatly disrupting the traditional milk industry.
Yes, more or less. If a recipe calls for full fat milk or cream and all you have is almond milk then you might not get the result you were hoping for. Remember it's not just the liquid, it's what's in the liquid that counts.
A common - and better - emulsifier for ice cream is soy lecithin, which can be derived from soybeans, sunflowers and rapeseed. Soy lecithin has a neutral taste, and also allows you to make egg-less ice cream.
Kaminsky says that you'll get the best results from dairy-free counterparts that are higher in fat such as canned coconut milk. She typically uses almond milk as her base, but other non-dairy milks can work (steer clear of rice milk because it tends to be too watery).
For a vegan dairy-free alternative to heavy cream, try mixing soy milk with olive oil. Much like the pairing of milk and butter, olive oil adds fat to the soy milk for a flavor and function comparable to heavy cream.
You dared us to go dairyless—and we did! Our Non-Dairy flavor creations are made with almond milk, 100% certified vegan, and boldly loaded with chunks and swirls. You'll get Ben & Jerry's euphoria in every bite. These flavors deliver everything… but the cow.
Yes absolutely! Vegans can eat non dairy ice cream made from a variety of nut milks (like cashew milk, coconut milk or soy milk), frozen fruits and berries, sweeteners and nut butters (almond butter, peanut butter ).
My ice cream is icy. This is probably the most common problem with home made ice cream. And it's caused by large ice crystals forming in the mixture as it freezes. Large ice crystals are usually the result of either too much water in the mix or excessively long freezing time.
- If your base is crumbly or powdery after processing, use the RE-SPIN program to make it smoother and creamier. Note: do NOT RE-SPIN if you will also be using the MIX-IN program, since running both after another program may over process ingredients.
The Ninja Creami is not a quiet or lightweight appliance. As the motor drives the paddle through the ice block, the appliance makes a very loud sound — so loud, in our experience, you won't be able to play music, hear the TV or phone calls, or talk over it.
Ninja Creami ice cream makers have been all anyone's talking about on TikTok recently. In fact, the machines are so popular it keeps selling out. But right now the Ninja Creami is finally back in stock on Amazon, and it's even on sale. The Ninja Creami is one of the most versatile ice cream makers out there.
Yes, it's dairy-free and vegan too (no eggs). Adding a little cornstarch to the coconut milk base, cooling then churning it before freezing, you're bound to make the best homemade vegan ice cream.
I recommend using whole milk for the creamiest texture. If you're dairy-free, I recommend using a milk that is higher in fat such as Oatly full-fat oat milk which is certified gluten-free. I do not recommend using 1 percent or fat-free milk, and heavy cream isn't necessary if you're using whole milk.
As long as your soak your nuts first, any decent blender will work for making almond milk. I love my Vitamix but I've also used a Ninja blender with success. Blendtec would also be suitable and Kitchenaid has some powerful models as well.
